Habanero Mango Chicken Quesadillas



Says Rachel Ray, the originator of this recipe, these colorful pinwheels make great holiday party snacks, but they're delish any time of year!  Rachel uses Chipotle Salsa in her original 2007 recipe.  We’ve chosen to spice things up with our own Havana Delight dipping sauce.

"Havana Delight": is our Citrus Habanero Olive Oil with our Mango Balsamic Vinegar.  We truly believe it deserves to be bottled and offered tableside at any authentic cantina.  It creates an incredible Vinaigrette. Try it as a marinade too!

4     large flour tortillas (10-12 inch diameter)

2 cups shredded Monterey Jack

1/4 cup chipotle salsa

2 cups chopped rotisserie chicken meat, shredded, still warm from store or warmed in microwave

1 /3 cup Tasteful Additions Citrus Habenero EVOO

2/3 cup Tasteful Additions Mango Balsamic Vinegar

Heat a large skillet over medium heat. Add a flour tortilla and blister it on one side, then turn it over. Scatter cheese on top and cook one minute.

Remove to cutting board. Top the tortilla with a bit of salsa, spreading it gently with the back of a spoon to the edges. Top with 1/2 cup chicken, then roll tortilla into a log. Let stand a minute before cutting. Repeat with remaining ingredients to make a total of four tortilla logs. Cut pinwheels into 1/2-inch slices and arrange on platter.  Drizzle with Havana Delight and get ready to cha cha cha.

*Note:  Short on time but want the heat of Havana this evening?  Use frozen prepared quesadillas and just shake together the EVOO and Vinegar in a cruet (like a dressing) and use as a dipping sauce.  Ay, Carumba!


Habanero Mango Chicken Quesadillas Take Two

Rotisserie Chicken (or any cooked chicken, cut or shredded)

Tasteful Additions Citrus Habanero Extra Virgin Olive Oil

Tasteful Additions Mango Balsamic Vinegar

Cilantro, fresh and chopped

Monterey Jack Cheese


Sour Cream


Shred some rotisserie chicken and sauté with a little red onion in Tasteful Additions Citrus Habanero Extra Virgin Olive Oil and Tasteful Additions Mango Balsamic Vinegar. Place on a flour tortilla with some fresh chopped cilantro and shredded Monterey Jack cheese. Place another flour tortilla on top to close. Fry both in a pan with a touch of butter. Drizzle with additional Mango Balsamic Vinegar and dollop some sour cream on top. Enjoy!
