Asha’s Homemade Curried Pumpkin Soup

A savory take on a fall favorite, submitted by Tasteful Additions owner, Asha Waterstreet!

¾ cup Tasteful Additions Roasted Garlic Extra Virgin Olive Oil

2 cups chopped onion

2 teaspoons Tasteful Additions Fusion Spicy Curry salt

6 cups chicken broth

32 oz. canned pumpkin

2 cups half and half

Sour cream and Tasteful Additions Hiwa Kai salt for garnish

In large saucepan, sauté onions in roasted garlic olive oil until soft.  Add spicy curry sea salt and cook for 1 minute. Add broth; boil gently, uncovered for 15 minutes.  Stir in pumpkin and half and half; cook 5 minutes.  Remove from heat.  Let it cool for a little white. Add to a blender in small increments and blend. (Be careful if the soup is still hot.  Make sure the steam is able to escape from the blender or it will splash everywhere.)  Garnish with sour cream and Hiwa Kai salt.
