Ham and Bean Soup


Ham and Bean Soup for Two

This has to be the easiest soup you will ever make.  It is one of the few soup recipes that is actually designed to be made in a small enough quantity to serve just two people.  Double the recipe for a family meal.

6 oz extra lean ham, cut into small cubes

1 cup salsa, mild or medium

1 can (15 oz) black beans, drained and rinsed

2 cups fat free chicken broth

2 tbsp Tasteful Additions Smoke Balsamic Vinegar

2 tbsp Tasteful Additions Italian Herb or Oregano Olive Oil

¼ cup chopped green onions for garnish


In a medium saucepan, combine ham, salsa, beans, and broth.  Bring to a boil over medium heat.  Reduce heat and add the olive oil.  Simmer for 10-15 minutes to blend flavors.  Serve in bowls. 

Swirl a little smoke balsamic into the center of each bowl of soup and garnish with onions.

This soup is also great with pieces of bratwurst, Italian sausage or even Anadouille sausage.  You can also replace the black beans with a can of lentils. Serves 2
